If there’s any meal that symbolises Saigon, it’s cơm tấm. Like many of the world’s greatest dishes, the city’s culinary staple originated out of poverty and necessity. Literally translating to “broken rice”, the cơm (rice) is made from the tấm (broken rice grains) that were fractured during the milling process. What farmers and poorer families long sustained themselves with became one of Vietnam’s most beloved dishes. Typically featuring sườn (a grilled pork chop), bì (shredded pork skin), chả (a steamed meatloaf), and trứng (a fried egg), here’s a list of some of Saigon’s best cơm tấm eateries to take a bite into history.
These locations come from recommendations from people who live in Ho Chi Minh City that we've recently profiled.

Cơm Tấm Ba Ghiền: Michelin-Approved Broken Rice a Short Walk from Trường Sa Canal
Recommended by Phúc Mập, Steven, and Kiet

About Cơm Tấm Ba Ghiền: While most don’t associate cơm tấm as a Michelin-worthy meal, Cơm Tấm Ba Ghiền is doing its part to change that assumption. Michelin Bib Gourmand selected for two years, this eatery has elevated cơm tấm dish to levels that the world’s premier food guide had to recognise. What stands out is the huge pork chop that’s been marinated for hours to create a slightly sour, savoury piece of meat. Compliment that with all your traditional cơm tấm accompaniments and you’ve got yourself a meal worth stopping by. If you’re still hungry after that mammoth-sized pork chop, head on down to Shake The Bun Burger for a taste of America!
